Anyone Knows How to Get a Wii Online to a Custom Server?

It's just so we can play Mario Kart Wii or something. I haven't played that game in a while, but man, playing that with my sister today just felt so refreshing and so goooooooood.....

I'm not sure what you mean by custom server. Nintendo owns and operates the servers for the online features of their games, you can't set up your own like you can with PC games

And even if you managed to host a GAME server the Nintendo login server for the online Mii's would stop the Wii connecting to the server.

Actually, there is one that works for only a few games, but it does work. Unfortunately the only way to use it is to patch your game somehow and then play the patched version on either an emulator or your console. The project is called "Wiimmfi" and it currently only supports MKWii, Super Smash Bros. Brawl, and Animal Crossing.

I'm agreeing with what Neo said. For consoles you might not be able to do it without breaking your warranty and/or doing something more advanced to alter your game's data.

The only thing I dislike about PC games is everything is single player on the client side. So I can't do splitscreen with PayDay 2 or Garry's Mod or anything else.

Yeah, but you can bring your pc to a friend's house and have a LAN game. My friends and I do that all the time. It sounds annoying to bring your whole PC, but it's really not that hard. I can pack my stuff in 5 minutes, easy. Despite that, though, there are ways to set up certain games to be splitscreen for your pc. I believe Left 4 Dead 2 can do it, and I heard something about Team Fortress 2 being able to do it, but I'm not sure.

Technically, you can do multiplayer if your motherboard supports virtual machine mode.
Just use either a Virtual machine to boot 2 OS's up or use sandboxie and load 2 games up at the same time. (One thing to be warned of is that MMORPG's have strict rules against using virtual environment software to dual-log their games and normally stick in counter measures to ensure it does not happen (Which the countermeasures fail 85% of the time))
