Full Metal Alchemist. Haven't watched enough of it to know what it would be like, but it's on my list of shows to watch.
Brotherhood is the better of the two shows. I recommend that one in particular, the original is ok but the ending is so bad it nearly ruins the whole thing. Plus Brotherhood is closer to the original manga if you're a stickler for that sort of thing.
