There could be quite a few reasons. Maybe Hunter found a way to get back to avalar? Maybe only the legend of Hunter lived on in Avalar and hunter was never seen again? As for the dragons not knowing about Avalar, how do we know this? We know that Ripto and the people of avalar know about dragons (not very much, but they still know about them)

Then again, the dragons never really talked that much anyway as they are usually treated as bystanders getting kicked around. They might know about Ripto but Spyro had never seen him before until he returned to Avalar by accident.

My theory is similar to the Pokemon Coma theory. I'm not sure if I posted the Spyro version on this thread, but basically, I think the TLOS games are the only real ones, and every other game took place as dreams in the three years between The Eternal Night and Dawn of the Dragon. Spyro was imagining a better, light-hearted world. The main characters were based on real characters or his own traits. The games got more "realistic" and darker, and some characters (Hunter) were introduced before Spyro met them, possibly because the Dragon Spirits were feeding him the thoughts.
Still a few holes, but I think it makes sense and is an acceptable connection between the two generations.

Hunter could be easily linked between the two series. At the start of Spyro 2 (Old Version), It is assumed that Spyro & Hunter have never met, but this is not clarified. Hunter is never given a true introduction to Spyro, He just complains about losing his running shoes etc and then they act like best friends for the rest of the original series.

At the End of DotD, Spyro and Cynder Fly off and no-one hears from them for a long time (obviously since not even the Chronicler knows where they are). It is possible that Hunter may have retired from his battles and went to live the rest of his life in TLoS Avalar. His forgetfulness of where he put his shoes, his overall senile-ness and stupidity towards most tasks in the Original Series could be accredited to his ageing since he retired.

It is also assumed in DotD (I read it somewhere...) that Spyro and Cynder only explore one valley of Avalar and that there is plenty more areas to explore that are never done. Therefore, Hunter could have come across another valley of Avalar such as aww. I don't know... Summer Forest? XD Not to mention, that Hunter knows quite alot about Avalar.

The original creators did not a have a great back-story for some of the characters compared to the TLoS Creators.... so many things can be assumed when talking about the original characters. With the probable hundreds of villages in Avalar, it is easy to see how some of the characters at the starts of levels (Colossus Monks, Breeze Harbor Breeze-Builders) came to be. I'm assuming along the lines of evolution. Over the years, Avalar could have expanded out, required the need for portals/hubs to access different areas.

~

The only inconsistency is that when the world breaks up, Hunter is seen with the Dragons so it makes it impossible for him to be living in Avalar without the other Dragons knowing of it which it is assumed when Spyro comes to Avalar that no dragons know of it...
